Beef Patties with Red Capsicum and Tomato Salsa

Ingredients

2 medium (400g) red capsicum, roasted, skinned and diced

1 medium (150g) tomato, diced

2 tbsp chopped parsley

1 clove garlic, crushed

1 tbsp lemon juice

2 tsp sugar

500g lean minced beef

1 tbsp sweet chilli sauce

½ cup (50g) dried breadcrumbs

1 egg, lightly beaten

1 clove garlic, crushed

2 tbsp chopped parsley, extra

½ tsp ground cumin

½ tsp ground coriander

Spray oil, for cooking

  • Instructions

    1. To make salsa, combine capsicum, tomato, parsley, garlic, lemon juice and sugar in a medium bowl. Mix to combine; set aside.
    2. Meanwhile, combine beef, sweet chilli sauce, breadcrumbs, egg, garlic, parsley, cumin and coriander. Shape mixture into 6 patties.
